'I would hate for x to happen' is just a polite way of saying 'I wouldn't want x to happen'.

So....

* 'I would hate for you to think that ......' is a polite way of saying 'I wouldn't want you to think that ....'

and

* 'I would hate for them to starve' = 'I wouldn't want them to starve'

etc.

It's a set construction used in both spoken and written English.
