Меня интересует как на английском лучше всего сказать: "Адаптировать сайт\адаптация сайта под мобильные устройства"

Есть вариант типа просто "adaptation of a site", а есть варианты такие "mobile-friendly version of a site", "responsive version", "mobile version of a site"

контекст не особо имеет значения тут, так как это сквозное понятие

Возьмите парочку сайтов по теме, созданных носителями языка, и посмотрите, как у них. Допустим, можно запустить поиск по фразе mobile-friendly version of a site и проверить полученные результаты.

'mobile-friendly' +1 if you want to use standard, everyday English as used eg by consumers -- for example, as found in computer magazine articles.

If you want something slightly more technical, you can also say: '(To adapt a site/How to adapt a site/Adaptation of a site) for use by mobile devices' -- for example, if it's for use in a technical document.

Everyone will understand the expressions above based on 'mobile-friendly', though.
