Folks who have little knowledge of DNA’s intricacies are marks for courtroom sharks.

'marks for' here probably means 'targets for'.

I've never heard of 'courtroom shark'. It could be a US term similar to the UK term 'loan shark' (a money-lender who targets vulnerable people and/or charges exhorbitant rates of interest) but relating to lawyers -- so someone who preys on the naive/vulnerable.

If your text relates to police/forensic evidence, then presumably it means that people who don't understand DNA risk being 'had for breakfast' by lawyers.
