There's a comma missing, if that helps:
'deny fuel to even ' => 'deny fuel to, even'

'that IT'S to deny' looks a bit odd. 'it' here, presumably, relates to sth mentioned in the previous sentence(s)/paragraph(s) -- which you haven't shown.

And 'TO deny' (presumably either the infinitive or future tense) also looks a bit strange here -- but, again, it may make more sense if you were to show the preceding sentences & paragraphs.

The original text, as I understand, is a transcription of a webinar. There are questions and answers. I haven't omitted anything in that sentence. Here is the context for that sentence:

Q: "Is the reduction of stroke events only due to the reduction in cholesterol, or are there pleiotropic effects?"

A: This is a question we always enjoy talking about at meetings and after the meeting, when we’re together socializing. I think it's very clear that LDL reduction is important, and it's key in risk reduction along with blood pressure reduction and in the reduction, and hopefully normalizing, of glucose levels. Because of the early benefit that's seen from these drugs, can there be these pleiotropic effects, something to do with the microvascular milieu inside the plaque, with the upregulation of eNOS, so that when you have a vascular event, you get more collateral flow? These are fun things to talk about, and 12 years ago, we were writing papers about it.
I think there are these other influences but never underestimate the power of LDL reduction because it's as if LDL is the central component of fuel for the plaque. Interesting. The English in the rest of the text is 10/10 but, grammatically, I can't see what the 'it' in 'it's to deny fuel to' could possibly refer to. I can only think that there's a word missing after 'it's', such as:

* 'it's difficult to deny fuel to'
* 'it's easy to deny fuel to'
* 'it's (un)able to deny fuel to'
* 'it's designed to deny fuel to'
* 'it's going to deny fuel to'

or something similar -- but these are only guesses. Is there another copy of the text somewhere that you could check?

Unfortunately, there is no other copy. I think the matter is in inaccurate transcribing of the speech.
