гарнир - side(s) dish(es), or steak served with... garnish - украшение. Если положить на стейк веточку петрушки - это garnish. насчет зажарки надо выяснять, потому что стейк может быть pan-fried. И что такое качество зажарки? По-моему речь вообще идет о навыках повара а не о качестве пищи.
