1)из курса химии (по памяти): возможно значит:
желатин со структурой "сетка" (что-то такое, надо залезть в курс химии школьный - как точно зовется в органике такая труктура молекулы)
2) "способности смешиваться и перерабатываться"
3) "избирается оболочка(материал, покрытие), основанная на протеине"

возможно так.....
