Я пытаюсь перевести следующее предложение:
Мы можем отделить интересниую информацию от неинтересно, правдивую от ложной.

Так будет правильно:
We can separate interesting information from not interesting, true information from false.

Или после "interesting" и "false" следует писать "one"?

No, you don't need "one".
I would say "uninteresting" rather than "not interesting".
