Кто знаком с правилами организации работы предприятий питания, подскажите, пожалуйста, русские термины для следующих слов:

1) Bank – в данном случае: сумма денег, которую получает бармен или кассир в начале смены

2) Tab – cчет или чек, но в данном тексте есть и check (счет), и receipt (чек), как еще можно назвать?

Bartenders may take the order from the Guest, make and deliver the order,
then immediately ring the order. Bartenders will either open a tab for the Guest by
entering a seat number or immediately conclude the transaction with payment.

If a Guest is undecided on food at the time they place their drink order, but does not
wish to run a tab, do not leave a cash tab open for longer than 15 minutes. Once the
food order is rung, the tab must be printed. The receipt must be presented to the Guest
upon delivering the food order.

3) Blind drop – речь идет о сдаче наличных денег, полученных за смену, «вслепую», т.е. кассир не знает, сколько у него денег в кассе и сдает их, не пересчитывая. Как это называется: сдавать выручку? сдавать кассу? производить выемку? «выемка вслепую»?

Blind Drop Method
Cash is not counted. All register paperwork is sealed in an envelope, and all cash is sealed in a tamperevident bag in the presence of a witness or surveillance camera. The cash handler deposits the funds at the cash room or a drop safe in the presence of a witness.
