Вопрос на засыпку: как перевести слово "дигестия" (=сахарность свеклы)? Смотрел в мультитране, там предлагается digestion. Но это,по-моему, больше означает усвоение пищи.

Кол-во извлекаемого сахара - amount of sugar extracted.
Хотя мне кажется, что сахарность это все-таки saccharose content или sucrose content, Я бы остановился на content. Period.

yield - это выход сахара, поэтому скорее всего content.

когда не знаешь, ставь rate - не ошибешься
